With significant amounts of fiber Potatoes help lower the total amount of cholesterol in the blood thereby decreasing the risk of heart disease. 

Recipe: Scalloped Potatoes

8 – 10 well scrubbed potatoes, sliced
In a blender or vita-mix, blend until smooth
4 cups water
1 cup cashews
2 Tablespoons onion powder
1 Tablespoon salt
Arrange potatoes by single layer in greased 9×13 casserole dish. Between each layer sprinkle with whole wheat flour and dot with earth balance and sprinkle with onion powder. Layer until all potatoes are used. Pour cashew milk over top. Cover with foil and bake at 395° F for 45 minutes and 15 minutes uncovered.
