Recipe: Savoy Cabbage Salad

INGREDIENTS:

2 large leaves Savoy Cabbage – washed and sliced into thin strips
1 large carrot – peeled into thin strips using a vegetable peeler
Toss together:
3-5 Tablespoons olive oil
3 Tablespoons chives
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
Let stand for 1 hour before serving.
Alternate:
Same steps as above
Use: zucchini, summer squash, eggplant, sun tomatoes
