Rice and beans one of the simplest, cheapest, and vegan-est meals in existence and one of the best sources of protein around. While rice is low in lysine and high in methionine, beans are low in methionine and high in lysine. Put them together and you have a protein content on par with that of meat. Rice and beans are a great way to load up on protein and carbohydrates after an intense workout.
Recipe: Rice and Beans
INGREDIENTS:
1 can Libby’s Organic Black Beans
Saute:
1 onion and 1 whole garlic clove in oil.
Add 1/2 bunch fresh cilantro chopped, dash garlic powder, onion powder, salt, lemon juice, and black beans.
Rice:
In a medium pot add:
1/2 bag brown rice with twice as much water
1/4 teaspoon salt
1/4 – 1/3 cup Bragg’s
1/4 cup onion (dried, minced)
1/2 Tablespoon garlic powder
2 Tablespoons Earth Balance
Reduce heat. Cover and cook until done.
Can Add:
2 large onions, 1 bell pepper, 1/8 cup water, 2 Tablespoons oil – saute till mushy. Great base for chicken stock, broth or gravy. etc. Add nutritional yeast flakes, salt, earth balance, water, corn starch.
